Why is 5 second the minimum? I would like to go less than that. Also the 5 second min timer, seems to take 10 seconds before showing next photo.

The Google Photos API has rate limits. The app is already hitting them. That's why 5 sec is minimum.
The 10s or longer time period is how long you're waiting for the actual photo to download:
<shows photo> -- 5 seconds --> <start retrieving next photo> --- photo is retrieving --> <photo displays>
... the retrieving can take 10 seconds if your internet is slow or photo is huge
