What apps are you guys using for creating overlays and logos for branding as i’m struggling at the moment.

Any line art application. If you don't own such software and don't want to buy it / rent it and learn how to use it, then you'll have to hire a designer to create it for you.
Adobe Illustrator and Affinity Designer are the two "top dogs" in the Apple world for line art right now. Designer has an iPad version as well.
After you create your vector design your best bet is to export it as a 300 DPI PNG with transparency.

Good news here: Wifibooth 4.4.0 will shortly be available, with the new feature for creating your own beautiful wordmarks quickly and easily straight from the app (event settings -> branding)
