I have 2 iPads I'd like to use at separate events at the same time. I wanted to check to make sure this is doable with a Wifibooth subscription?

Yes, you're allowed to use multiple ipads on the same subscription concurrently for Wifibooth, so long as they are all signed in with the same apple id that bought the subscription.
